Ingredients
3 cups (750 ml.) all-purpose flour
2 cups (500 ml.) granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 cup (250 ml) crushed pineapple, undrained
3 eggs
1 1/2 cups (375 ml) canola oil
2 cups (500 ml.) mashed ripe bananas (about 5)
2 tsp. vanilla extract
Preparation
Combine first five dry ingredients (flour, sugar, baking powder and soda, and salt).
Beat remaining ingredients together in a bowl until well blended. Add dry ingredients, stirring until thoroughly combined.
Spread into 2 greased 8 1/2’‘X4 1/2’’ (1.5 L) loaf pans, dividing evenly.
Bake at 350F/180C for 60-70 minutes, or until a toothpick inserted in centre comes out clean. Cool 15 minutes in pan, and then remove to rack and cool completely.
Tip: Stir 1 cup (250 ml) chopped nuts into batter if desired. Macadamia or Brazil nuts are nice.
