Ingredients

2 eggs

4 Tablespoons milk

3 1/2 oz. self-rising flour

1/4 teaspoon salt

7 oz. can corn, drained

3 oz. ham, diced fine

canola oil

Preparation

Heat 1/4 inch of oil in frying pan on medium-high. Whisk together eggs, milk, flour and salt. Stir in corn and ham. Drop by large spoonfuls into hot oil and cook 1-2 minutes on each side, until golden brown.
