Ingredients

2 c. flour

1 stick cold unsalted butter

1/3 c. shortening

1/3 c. ice water

pinch salt

Preparation

Mix flour and salt in a bowl. In food processor, cut butter and shortening into flour. Add ice water slowly, until dough forms a ball. Shape into two flattened rounds and refrigerate.

To roll out, roll dough on lightly floured surface to 2" larger than pie pan. Fold pastry into quarters, place in pan, carefully unfold.

MOM TRICK: Cut butter into chunks before processing, but cut into differently-sized chunks, so that you get a variation of butter chunk sizes in the crust.
