Ingredients
2 large tomatoes, chopped
1/2 red onion, chopped
1 jalapeño, finely diced
1/2 bunch fresh cilantro, chopped
1 can black beans, drained and rinsed
1 can corn, drained
1 lime, juiced
Preparation
Combine all ingredients in a large bowl, plus salt and pepper to taste, and refrigerate to chill.
Serve with chips, on its own, or as a topping for just about anything. Keep a container of it in your fridge for a week and you’ll be surprised at how much you’ll use it.
