Ingredients
1 red onion, thinly sliced lengthwise
1/2 cup sugar
1/2 cup water
1/2 cup white vinegar
1 jalapeno, sliced into rounds
Preparation
Combine all ingredients except onion in medium saucepan. Bring to boil, stirring until sugar dissolves. Add onion to pan and cover. Remove from heat and let cool to room temperature. Store in airtight container in refrigerator for up to 1 month.
