Ingredients
young carrots
1 quart vinegar
1 tablespoon whole cloves
1 tablespoon whole allspice
1 tablespoon mace
1 quart sugar
Stick cinnamon
Preparation
Boil young carrots until skins slip. Remove skins. Slice or leave whole. Pour syrup made of vinegar, sugar and spices (put spices in cheesecloth bag) boiling hot over carrots. Let stand overnight, then bring to boil and boil 5 minutes. Remove spices and pack into sterilized jars. Fill jar to within 1/2 inch of top with syrup. Process in hot water bath.
