Ingredients
1 T olive oil
10 OZ frozen spinach chopped
4 Oz cream cheese
1 small egg beaten
1 c butter melted
.5 c chopped onion
8 oz riccota cheese
4 oz feta cheese
12 phyllo pastry sheets
Preparation
thaw spinach and squeeze dry heat oil in large skillet over med-high heat . Add onion and sauté until translucent , about 3 min..Reduce heat to low and add spinach. Slowly stir in cheeses until blended . Cook 5 min . remove from heat add egg and mix well. Butter 13x 18 " baking sheet . Stack 3 phyllo sheets on a damp towel.Brush each sheet w/ melted butter. Spoon about 1/2 C filling into 1 1/2 " wide strip down long edge of phyllo. Roll up as for jelly roll, starting at the long edge w/ filling and using towel as aid . Transfer to prepared sheet seam side down. Brush w/ melted butter. repeat w/ remaining phyllo for three more rolls . Freeze for 15 min .Preheat oven to 350 cut rolls int 1" pieces . bake until golden brown 15 min
