Ingredients
1 lb skinless boneless salmon raw
2-3 chopped scallions including green part
1 egg
2 T fresh grated ginger
1 T lemon juice
salt and pepper to taste
Preparation
Cut salmon into chunks. Put all ingredients in a food processor, process on pulse until it appears to be the texture of ground meat. Do not over process - you don’t want paste. This can be done ahead of time and refrigerated. Cook in a non stick pan or use a small amount of oil. Shape into patties 2 " in diameter and cook over medium high heat until the edges of the cake appear translucent - 2 minutes at most. Turn and cook briefly on the other side. Be careful not to overcook. Serve warm with a squeeze of fresh lemon juice or a drizzle of soy sauce if you wish.
