Ingredients

1/2 cup finely chopped Red Onion

1 finely chopped Jalapeno Pepper

1 finely chopped Serrano Pepper

1 small Tomato chopped

4 ripe Avocados

1/2 cup chopped Mint

1 tablespoon of Rice Wine Vinegar

1 tablespoon of Lime Juice

1 t-spoon of sugar

1/4 t-spoon of Cumin

1/4 t-spoon of Garlic Powder

Pinch of Salt & Pepper

Preparation

Chop onions, peppers, tomatoes and mint and mix together. Add sugar, cumin, garlic powder, salt, pepper, vinegar and lime juice. Mix and let stand in refrigerator while you prepare avocados.

Cut avocados in half, remove pit and score horizontally and vertically in criss cross pattern through to skin. Turn avocado halves inside out and scrape pieces into a bowl.

Mash very slightly so that avocado mixture is a combination of paste and chunks.

Add to chopped vegetable mixture and stir thoroughly with fork.

Refrigerate and allow flavors to combine for 30 minutes.

Serve chilled with chips, pita, and veggies or as a side with any Mexican food.
