Ingredients
2 containers plain yogurt (totalling approx. 400 grams), strained for 24 hrs (I use a combination of goat and sheep milk yogurt, but cow is fine, too)
Half a cucumber*, peeled and roughly grated
5 to 8 cloves roasted garlic, finely minced/mashed
Juice from 1/2 a lemon (or to taste)
8 to 15 leaves fresh mint, chopped
1.5 - 2 tbsp olive oil
salt (2 generous pinches)
Preparation
*after grating, make sure you squeeze out as much of the excess water from the cucumber as possible.
