Ingredients
Steaks
1 stick unsalted butter
3 cloves garlic, coarsely chopped
Kosher salt
Pepper
Vegetable oil
Preparation
Dry the steaks. Coat with vegetable oil on all sides, and sprinkle with salt and pepper. Sear tops & bottoms of steaks (and sides, if thick) in cast iron skillet, 2 minutes per side. Combine butter, garlic, salt & pepper to taste, and put a dollop on each steak. Keep steaks in skillet and place in 400 degree oven until meat thermometer registers 140 degrees. Remove steaks from skillet, tent with foil, and let rest 10 minutes.
