Ingredients

5 lbs. Red Skin Potatoes (uniform size)

1 medium Red onion, chopped

1 bunch green onions, thinly sliced

2 tsp. salt or to taste

1 bunch chives

fresh ground pepper to taste

Dressing:

3 tbs. red wine vinegar

3 tbs. olive oil

2 cups mayonaisse

1/3-1/2 milk

Preparation

  1. Boil Potatoes 30 minutes or until tender.
  2. Drain and cool potatoes (can be refrigerated overnight).
  3. Peel potatoes and quarter each potato, then slice into 1/4 inch slices.
  4. Add chopped red and green onions, salt and pepper, then toss with potato slices.
  5. Fold in dressing (dressing prep. instructions below)
  6. Chill for approx. 2 hours before serving.
  7. Garnish with chives Dressing:
  8. Wisk all ingredients together; consistency should be of a thick sauce but pourable.
