Ingredients
5 lbs. Red Skin Potatoes (uniform size)
1 medium Red onion, chopped
1 bunch green onions, thinly sliced
2 tsp. salt or to taste
1 bunch chives
fresh ground pepper to taste
Dressing:
3 tbs. red wine vinegar
3 tbs. olive oil
2 cups mayonaisse
1/3-1/2 milk
Preparation
- Boil Potatoes 30 minutes or until tender.
- Drain and cool potatoes (can be refrigerated overnight).
- Peel potatoes and quarter each potato, then slice into 1/4 inch slices.
- Add chopped red and green onions, salt and pepper, then toss with potato slices.
- Fold in dressing (dressing prep. instructions below)
- Chill for approx. 2 hours before serving.
- Garnish with chives Dressing:
- Wisk all ingredients together; consistency should be of a thick sauce but pourable.
