Ingredients

1 pound rotini pasta

2-4 tablespoons chopped bermuda onion

2 jars diced or chopped pimientos

2 cans small pitted black olives

1 box cherry tomatoes

red wine vinegar

salt & pepper to taste.

Preparation

Cook 1 pound pasta al dente & set aside. Chop/dice 2-4 tablespoons Bermuda onion & set aside. In a large bowl toss pasta with onion, pimientos, olives, tomatoes, vinegar, salt & pepper. Chill for at least one hour. Toss again & check for needed vinegar, salt or pepper before serving.
