Ingredients
2 Tbsp butter
2 Tbsp olive oil
1 scallion diced [or 1/2 small onion diced]
1 tsp garlic paste [or one tsp minced garlic
1 121/4 can diced tomatoes
1/2 tsp basil
1/2 tsp oregano
[if using dried herbs be sure to crush them before adding to dish]
1 pound cooked pasta [whatever type you prefer- we like linguini]
1/2 c. shredded parmesan [optional]
salt and pepper to taste
Preparation
One medium heat warm a large saucepan, when pan is heated place butter and olive oil in pan. Add diced scallion [or onion],garlic paste [or diced garlic], diced tomatoes and herbs. stir and adjust heat to medium/low. Simmer dish for 15-20 minutes, stirring on occasion. Add cooked pasta and stir well to combine. Allow to simmer on same heat setting for 5-10 minutes. Just before serving sprinkle with parmesan and salt and pepper.
