Ingredients

1 lb. can of crab meat

1/2 T mayonnaise

½ T dijon mustard

1 T each chopped fresh chives and parsley

1 egg

salt

pepper

Old Bay crab seasoning

Preparation

Fold all ingredients gently in a mixing bowl - don’t over mix

Form into small patties and roll in panko or bread crumbs

Heat skillet at medium heat, with olive oil

When heated (the pan sizzles with a drop of water), place crab cakes in pan and turn occasionally until golden brown, 7-10 minutes.

Serve with rice, salad and a cooked vegetable.
