Ingredients

1 C evaporated milk or heavy cream

1 C granulated sugar

4 1/2 OZ unsweetened chocolate, cut into small pieces

Pinch of salt

4 OZ unsalted butter, cut into pieces

1 T vanilla extract

Preparation

Mix milk and sugar in a heavy saucepan and stir over medium heat until it comes to a full boil. Reduce heat so that mixture simmers and leave uncovered to cook for 6 minutes. Remove from heat and stir in chocolate, butter, salt and vanilla until smooth and shiny. It will thicken as it cools. If you want to speed the process along, stir over a bowl of ice and water until cool and slightly thickened and then transfer to a mixing bowl and mix on high speed for a few minutes until thick enough to hold its shape. It will lighten in color when mixed in a mixer. If you leave it to cool in the refrigerator, it will stay dark, like fudge.
