Ingredients
1 head of torn greens-any will do
one orange-sectioned without membrane
2 sliced scallions
2 or 3 tablespoons of lightly toasted slivered almonds
1/2 sweet red pepper cut into 1 inch pcs.
1/4 cup crumbled feta (pref. goats milk feta)
1/2 bulb of thinly sliced fennel bulb
3 tbls olive oil
1 tbls seasoned rice vinegar(the one with sugar)
salt and pepper to taste
Preparation
mix together and serve. Great with a piece of grilled chicken or really any kind of meat or fish.
the olive oil/ vinegar quantities should be done to taste.
