Ingredients
Spring Mix or Mesculin Salad Greens
1 pkg. Peppered Boursin cheese
Raspberry Vinaigrette:
4 tbsp. raspberry jam
2 tbsp. rice wine vinegar
2 tbsp. extra virgin olive oil
Preparation
Open package of pre-washed salad greens and arrange artfully on two plates. Crumble cheese and sprinkle on top of the two salads dotting it generously. In a bowl, combine raspberry jam and rice wine vinegar. Stir together until jam becomes more liquid like. Add a touch more rice wine vinegar to break down the jam if needed. Add extra-virgin olive oil and whisk together until combined. Pour over both salads.
