Ingredients
3 cup hot cooked rice
1 lb round steak 0.5 inch thick
1 Tbsp paprika
2Tbsp butter
2 cloves garlic crushed
1.5 cup beef broth
1 cup green onions sliced
2 green pepper cut 1 inch strips
2Tbsp corn starch
0.25 cup water and soy sauce
2 large tomatoes (cut in length)
Preparation
while rice is cooking pound steak to 1/4 inch thickness and cut into 1/4 inch stips sprinkle meat with paprika and allow to stand while preparing other ingrediants using a large skillet brown meat in butter add garlic and broth cover and simmer for 30 mins stir in green onions and green peppers cover cook 5mins more blend cornstarch, water and soy sauce. Stir into meat mixture. Cook, stirring until clear and thickened in about 2mins Add tomatoes and stir gently. Serve over bed of rice.
