Ingredients
1/2 red pepper
1/2 yellow pepper
1/2 orange pepper
1/2 green pepper
4 celery stalks
4 carrots
3 leaves of red cabbage
5 radishes
cucumber
Optional - tomato, broccoli, cauliflower, fennel
Trail mix (nuts, seeds, raisins, dried cranberries)
Feta Cheese (crumbled)
Preparation
Chop all ingredients down to radishes by hand (including optional items) into very small pieces. Mix. Salad at this stage can be stored for days in the refrigerator in a bowl with a paper towel over it. (Add cucumber, trail mix and cheese as it is being served).
