Ingredients
12 Green Peppers
12 Red Peppers
12 Medium Onions
2 HOT ‘Red Peppers
3 C Vinegar
2 1/2 C Sugar
2 t Salt
Lots of boiling water
Preparation
Cut up and remove seeds from Peppers and put all peppers and onions thru a food chopper. (chopped pieces should be no bigger than a dime or smaller) Cover with boiling water and let stand for 5 min. Drain. Again cover with water and let stand 10 min. DRAIN. Add Vinegar, sugar and salt and boil for 15 min.
Seal in clean canning jars per directions of the manufacturer. Boil jars with water just below top of relish in jar for 5 min. Be sure jars are sealed tightly. Makes 5 pints.
