Ingredients
1 15oz can kidney beans
1 15oz can pinto beans
1 15oz can corn
1 red onion chopped
2 garlic cloves chopped
1 red bell pepper chopped
1 jalapeno pepper chopped
½ cup chopped fresh cilantro
1 teaspoon ground cumin
1 tablespoon ground cayenne pepper
1 teaspoon ground black pepper
1 teaspoon salt
¼ cup canola oil
½ cup vinegar
juice of 2 limes (¼-½ cup)
Preparation
Mix beans and vegetables together in a large sealable bowl.
Blend remaining ingredients in a separate smaller bowl for dressing.
Pour prepared dressing over main ingredient mixture. Seal bowl and chill several hours or overnight before serving.
