Ingredients

1/2 stick of butter

1/2 chopped onion

1/2 cup vodka (cheap vodka is fine!)

2 cans of tomato sauce (28 oz size each)

Dash of Italian seasonings

1 cup heavy cream (If watching fat/calories use low fat or fat free evaporated milk.)

1/2 cup grated parmesan cheese

1 pound penne pasta

Preparation

Melt butter in large pan. Add onion and cook until it is transparent. Add vodka and simmer until the liquid is reduced by half. (About 10 - 20 minutes.) Add tomato sauce and some Italian seasoning. Simmer for about 30 minutes. Begin cooking pasta while sauce is simmering. Add cheese and cream to sauce. Serve over penne pasta.
