Ingredients

12oz penne

3T extra virgin olive oil

1 shallot, finely chopped

28oz can whole plum tomatoes (crushed by hand)

1/4c vodka

1/2t salt

1/4t red pepper flakes

1/3c heavy cream

parsley (optional)

1/2 grated parmesan (plus more for serving)

Preparation

Cook penne; reserve 1c cooking water. Heat 2T of the oil in a large skillet over medium heat. Add shallot, cook 2 minutes. Add tomatoes, vodka, cooking water, salt and red pepper. Simmer 12-15 minutes, until thickened. Stir in cream, simmer 1 minute. Add pasta, remaining 1T olive oil, grated parmesan, and parsley, if using. Cook, tossing, 2-3 minutes. Serve with extra salt and cheeses to taste.
