Ingredients
12 oz oil marinated artichoke hearts
1 C chopped onions
1 T minced garlic
2 28oz cans crushed plum tomatoes
2 T tomato paste
1 t dried basil
1/2 t dried oregano
1/8 t red pepper flakes
salt and fresh ground pepper
2 T chopped parsley
12 oz cooked penne pasta
Preparation
Drain artichokes, reserve oil and halve them lengthwise. Place 3 T of the artichoke oil in a heavy pot, add onions and stir on low for 8 min, add garlic and cook 2 more min. Add tomatoes, paste, basil, oregano, pepper flakes, salt & black pepper to taste. Simmer uncovered 45 min. Add reserved artichoke hearts with remaining oil and stir and simmer 20 min. Stir in parsley.
