Ingredients

10 roast chicken thighs, 3 roasted green chiles with the skins removed,1/4cup chopped sun dried tomatoes,6 sauted scallions cut into 2inch pieces, 2tbs roasted pine nuts,olive oil,garlic to taste,penne pasta 1lb.

Preparation

roast the chicken thighs in the oven and remove the skins…burn the chiles over the flame and remove the skins..soak the sun-dried tomatoes and then chop them coarsely…pan roast the pine nuts until they get a little color…saute the scallions in some olive oil until soft…cook the penne until almost done…..slice some cloves of garlic and saute them for 30 seconds in 6 tbs. olive oil….add all the ingredients and toss with the pasta…1 minute and serve…
