Ingredients
1 lb. Penne
2 avocadoes
1 clove garlic, minced
1 large tomato, seeded, peeled, and chopped
salt and pepper
Preparation
Cook the penne until al dente and drain, reserving 1/2 cup of pasta water. Set aside. Cut the avocadoes in half and remove the pit. Scoop the avocado meat into a bowl, add the garlic, and mash the mixture until smooth. Taste and season with salt and pepper. Add cooked penne and tomato, toss and serve warm.
