Ingredients

2 lb or so chicken breasts, simmered till cooked

4 green onions, sliced thin

1/2 red pepper, diced small

1/2 c. pitted kalamata olives, halved

About 1/4 cup remoulade sauce (essentially it’s a mayonnaise with tabasco sauce and cayenne in it, in case you can’t find it at the grocery store, but it’s often with the salad dressings)

Additional light mayonnaise to taste

A little salt

Preparation

If you don’t have the remoulade, just add some tabasco and cayenne to regular mayo, but the remoulade really makes it special.

Put it on some torn-up greens and call it lunch
