Ingredients

1 lb ground beef, or half beef and half turkey

1 cup fresh (not dried) bread crumbs (2 slices of bread)

1 medium onion

4 cloves garlic

2 tbsp fresh parsley (optional)

1 egg

1/2 tsp dried basil

1/2 tsp dried oregano

2-3 tsp grated parmesan cheese

1/2 tsp freshly ground black pepper

1/2 tsp salt

1/4 tsp dried sage

1/8 tsp dried thyme

Preparation

  1. Preheat oven to 375 deg F. Lightly spray a cookie sheet with Pam if you are using any ground turkey (its too dry to let out its own oils).
  2. Put the meat in a large bowl.
  3. In a food processor, grind the bread into fine crumbs. Add to the meat.
  4. In the food processor, finely chop onion, garlic, and parsley. Add to the meat.
  5. Add all the spices, egg, and parm cheese to the meat and combine it with your hands.
  6. Form into balls and arrange on the cookie sheet without touching.
  7. Bake for 20 minutes, turn them over with tongs, and back for another 15-20 minutes or until done.
  8. Simmer them in sauce or cool completely and freeze in a ziplock bag. Frozen meatballs can be pulled out of the bag indiviually and defrosted quickly by simmering them in sauce.
