Ingredients
1 lb ground beef, or half beef and half turkey
1 cup fresh (not dried) bread crumbs (2 slices of bread)
1 medium onion
4 cloves garlic
2 tbsp fresh parsley (optional)
1 egg
1/2 tsp dried basil
1/2 tsp dried oregano
2-3 tsp grated parmesan cheese
1/2 tsp freshly ground black pepper
1/2 tsp salt
1/4 tsp dried sage
1/8 tsp dried thyme
Preparation
- Preheat oven to 375 deg F. Lightly spray a cookie sheet with Pam if you are using any ground turkey (its too dry to let out its own oils).
- Put the meat in a large bowl.
- In a food processor, grind the bread into fine crumbs. Add to the meat.
- In the food processor, finely chop onion, garlic, and parsley. Add to the meat.
- Add all the spices, egg, and parm cheese to the meat and combine it with your hands.
- Form into balls and arrange on the cookie sheet without touching.
- Bake for 20 minutes, turn them over with tongs, and back for another 15-20 minutes or until done.
- Simmer them in sauce or cool completely and freeze in a ziplock bag. Frozen meatballs can be pulled out of the bag indiviually and defrosted quickly by simmering them in sauce.
