Ingredients
single pie crust:
3/4 cup flour
1/4 cup (1/2 stick) frozen butter
4 tbls iced water
Custard filling:
3 eggs
1/4 cup light organic sugar
1/4 cup dark brown sugar
1/2 cup light corn syrup
1/2 cup sugar cane syrup
1/3 cup butter, melted and cooled
1/2 tsp salt
1/2 ounce Bourbon or Cognac
1 cup pecans, broken into small pieces amd lightly toasted
Preparation
Prepare pie crust: Cut butter in small pieces and place them with the flour in a food processor. Pulse until incorporated and small pieces remain. Add water, a tablespoon at a time to mixture while pulsing until it forms a ball. Roll out and place in pie pan.
Custard filling: Place all ingredients, except nuts, in a mixing bowl and beat at medium speed until combined.
Add nuts.
Pour batter into pie shell.
Bake 45 minutes, or until set, at 375 degrees.
Cool and serve with whipped cream or vanilla ice cream.
