Ingredients

1/2 cup chopped pecans

1/2 cup orginal soy milk

1 1/2 teaspoons cinnamon

2 medjool dates

2 tablespoons pure maple syrup

2 tablespoons Dr. Fuhrman’s Spicy Pecan Vinegar (optional)

Preparation

Blend half the chopped pecans with the other ingredients. When creamy, remove from blender and add remaining pecans so the dressing remains lumpy. Pour over baby romaine or spinach for a soft, but crunchy, salad. This is also good with chunks of pear mixed in.
