Ingredients
2 cups sifted all-purpose flour
1/4 cup granulated white sugar
1/2 teaspoon salt
1 cup soft (not runny or whipped) butter
2 teaspoons vanilla extract
2 cups chopped pecans
Preparation
Sift together the flour, sugar and salt
Add the butter and vanilla and work with spoon or hands until well blended
Add pecans and mix well.. hands work best
Shape into 1 inch balls
bake in preheated slow oven (325 degrees) for about 25 minutes or until pale brown
Remove and roll in granulated sugar and cool on wire rack.
These store well in an airtight container for a few weeks.
