Ingredients

1 (12 oz.) package frozen peas

3 tbsp lemon juice

3 tbsp water

3 scallions, cut into thin rounds

2 tbsp thinly sliced fresh mint

2 tbsp olive oil

1 tsp kosher salt

Preparation

Combine the peas, lemon juice and water in a small saucepan. Bring to a simmer over a medium flame.

Cover and cook until peas are just tender and heated through, about 4 minutes.

Remove from heat and stir in the scallions, mint, olive oil and salt.
