Ingredients

4 teaspoons extra virgin olive-oil

2 tablespoons pine nuts

4 cloves garlic, minced

2 pounds fresh spinach, stems removed

1 1-pound bag frozen baby sweet peas - thawed

4 teaspoons balsamic vinegar

1/4 teaspoon salt

4 tablespoons shaved parmesan cheese

1 cup fiber cereal (such as Fiber One)

Preparation

  1. Heat oil in large nonstick skillet or dutch oven over medium-high heat
  2. Add pine nuts and garlic - saute until fragrant - about 30 seconds
  3. Add spinach and baby sweet peas, stirring, until spinach is just wilted - about 2 minutes
  4. Remove from heat and stir in vinegar and salt
  5. Sprinkle with the shaved parmesan cheese and fiber cereal and serve immediately
