Ingredients
2 tsp vegetable oil
4 green onions sliced
2 cloves garlic minced
2 1/4 cups chicken stock
1 cup coconut milk
pinch cayenne pepper
1/2 tsp dried thyme
1/4 tsp salt
8 whole allspice (I never have this so I don’t bother)
1 1/2 cups rice
1 can black beans
Preparation
In saucepan, heat oil over medium heat; cook onions and garlic for a minute. Add stock, coconut milk, pepper, thyme, salt and allspice. Bring to a boil. Add rice. Return to boil. Cover and cook over medium low heat for 15 minutes. Stir in beans; cook for 10 minutes or until rice is tender. Discard allspice.
