Ingredients
1 cup Pearl Couscous
1 1/2 tablespoons white-wine vinegar
1/2 tablespoon lemon juice
1/4 cup olive oil
1 large cucumber, peeled, seeded and chopped
1/2 cup fresh mint
salt
Preparation
Prepare couscous in chicken broth(rather than water) per package directions. Drain and allow to cool. In a bowl whisk together vinegar, lemon juice and olive oil. To the couscous add the dressing, cucumber and mint. Toss well and serve. May be made several hours in advance and kept covered and chilled.
