Ingredients
1 c POM Wonderful Pomegranate juice
1/2 c White Vinegar
1 Lemon - juice and zest
2 T Honey
1 T Dijon Mustard
1 c Canola Oil
1/2 c Arils from 1-2 Large Pomegranates
1 lb Salad Greens
1/2 c Honey Roasted Almonds
1 c Blue Cheese Crumbles
2 Pears - ripe & sliced
Preparation
Dressing: In a large mixing bowl, combine the pomegranate juice, white vinegar, lemon juice and zest, honey and dijon mustard. Slowly whisk in the oil, seasoning with salt and pepper. Salad: Score 1-2 fresh pomegranates and place in a bowl of water. Break open the pomegranates to free the arils. Sieve and put the arils in a separate bowl. Reserve 1/2 cup of arils and set aside. Toss the green salad with just enough dressing to lightly coat. Top with almonds, blue cheese and sliced pears. Garnish with fresh pomegranate arils.
