Ingredients

1/2 c. walnuts

3 Tbs olive oil

1 Tbs fresh lemon juice

6 c. (3/4 pound) loosely packed romaine lettuce

2 pears, cored & thinly sliced

3 oz reduced fat herbed goat cheese (or gorgonzola)

salt & freshly ground pepper

Preparation

Heat oven to 275 degrees. Spread walnuts on a baking sheet and bake until fragrant ~8 minutes.

Place oil, lemon juice, and pinch of salt and pepper in a jar with a lid. Close tightly and shake vigorously to combine.

Place lettuce and pear slices in a mixing bowl. Season with salt & pepper, add dressing & toss. Divide among 4 plates, sprinkle cheese and nuts on top, and serve.
