Ingredients

1 small or 1/2 medium jicama, peeled and julienned

3 bosc or other firm, ripe pears, cleaned and julienned

8 ounces fontina, or other mild cheese, julienned

2 Tablespoons extra virgin olive oil

2 Tablespoons lemon juice

1 teaspoon sugar

Salt and Pepper to taste

Preparation

Place juilenned jicama, pear and chese in medium bow.

Whisk together olive oil, lemon juice, sugar, and salt and pepper, and then toss this dressing into the pear mixture.
