Ingredients

10 cups mixed baby lettuce

2 red Bartlett pears (or other red skinned pear), sliced into wedges

1/4 cup walnut halves, toasted and roughly chopped

1 oz Manchego cheese, thinly shaved

3 tbsp walnut oil

1 tbsp sherry vinegar

1 tbsp water

1 tsp Dijon mustard

1 tsp honey

1/4 tsp salt

1/8 tsp cracked pepper

2 tbsp pomegranate seeds

Preparation

  1. Divide the lettuce, pear wedges, walnuts and cheese among 4 plates.
  2. In a small bowl, whisk together oil, vinegar, water, mustard, honey, salt and pepper.
  3. Drizzle each salad with dressing, then sprinkle 1/2 tsp pomegranate seeds on top.
