Ingredients

1 pound chicken breast half without skin

1/2 cup soy sauce

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon curry powder

1 teaspoon toasted sesame oil

1/4 teaspoon coriander

1 teaspoon garlic

1/4 cup smooth peanut butter

1/2 teaspoon ginger root, grated

1/8 teaspoon crushed red pepper

Preparation

  1. Rinse and pat dry chicken. Cut lengthwise into 1-inch wide strips.

  2. Combine soy sauce, oil, lemon juice, curry powder, sesame oil, coriander and garlic. Marinate chicken strips in plastic bag 1-2 hours.

  3. For peanut sauce, gradually stir 4-5 tablespoons hot water into peanut butter until smooth and of a sauce-like consistency. Stir in gingerroot and red pepper.

  4. Skewer chicken strips and grill 5 to 6 minutes in closed grill over medium heat, brushing with marinade and turning halfway through.
