Ingredients
3 cups yogurt
2 cups salted/roasted peanuts, coursely chopped
3 cups cherry tomatoes, sliced in half
3 cups sliced cucumber (preferrably organic and non-waxed)
3 cups finely sliced onions (see note)
2 Tbs. chopped cilantro (optional)
2 sprigs of mint for presentation
salt and freshly ground black pepper to taste
Preparation
Cut onions in half and slice thinly. Note: if using white or yellow onions and you would like to reduce the heat, soak in cool water for 30 minutes- drain thoroughly.
Combine Tomatoes, cucumbers, peanuts in a large bowl. Add yogurt and combine gently. Add salt after tasting (peanuts may provide enough salt). Add pepper and cilantro if desired. Let salad rest for 15 minutes to let flavors mix. Serve with sprigs of mint.
