Ingredients

Marinade:

1/2 cup peanut butter

1/4 cup peanut oil

2 T. white wine vinegar

2T. chopped parsley

2T. red pepper flakes

1/4 soy

2 T. lemon juice

4 cloves garlic, minced

2 T. chopped fresh ginger root

1 1/2 lb. chicken breast cut into 2’ cubes

Preparation

Mix marinade ingredients and wisk until smooth - add a few t. of water if too thick.

Marinate chicken for no more than 60 minutes.

Place meat on skewers and grill 8-10 minute, turning occasionally.
