Peas And Spinach Salad Recipe
Ingredients 4 teaspoons extra virgin olive-oil 2 tablespoons pine nuts 4 cloves garlic, minced 2 pounds fresh spinach, stems removed 1 1-pound bag frozen baby sweet peas - thawed 4 teaspoons balsamic vinegar 1/4 teaspoon salt 4 tablespoons shaved parmesan cheese 1 cup fiber cereal (such as Fiber One) Preparation Heat oil in large nonstick skillet or dutch oven over medium-high heat Add pine nuts and garlic - saute until fragrant - about 30 seconds Add spinach and baby sweet peas, stirring, until spinach is just wilted - about 2 minutes Remove from heat and stir in vinegar and salt Sprinkle with the shaved parmesan cheese and fiber cereal and serve immediately
